Mixed Pepper Scramble With Chilli, Onion, Tomato & Spinach Salad


- 3 Free Range Eggs

- 1 Red Onion – 2 Bell Peppers

- Cherry Tomatoes

- 1 Fresh Red Chilli

- Spinach Leafs

- Grapeseed Oil

How To:

1: Mix in a large bowl 3 eggs until Yolk and Egg whites are of a consistent texture then add a pinch of salt and a little pepper.

2: Finely chop Peppers, Onions and Chilli and Tomatoes and add to your Egg mixture.

3: Pre heat a frying pan with a little Grapeseed Oil (Medium/High Heat)

4: Add the Scramble mix to the pan and cook for a 3/4 few minutes either side or until golden brown

5: Serve with Spinach Leaf Salad
