Cajun Spiced Chicken With Stir Fried Mixed Vegetables


- Large Chicken Breast

- Cajun Spices

- Mixed Vegetables (Cabbage, Bean Sprouts, Shredded Carrott, Mushroom, Water Chestnuts)

- Grapeseed Oil

- Optional: Mixed Salad rather than Mixed Vegetable Stir fry

How To:

1: Generously coat the Chicken breast with Cajun Spices and place on a baking tray, cover with tin foil and bake for 20-30 minutes (Depending on size of the Chicken)

2: Roughly chop the cabbage and stirfry in a pan with the rest of the vegetables on a high heat, add a little Grapeseed oil during cooking (Cooking time is around 5-7 minutes depending stifry texture preferences)

3: Alternatively serve with Spinach or Mixed Leaf salad
